Easy 3-ingredient Vegan & GF Pancakes
Quite possibly, one of the simplest recipes of all times! These healthy pancakes are dairy-free, egg-free, gluten-free and are perfect for breakfast, a cheeky snack or a dessert after dinner.
What Do You Need :
- Mixer/Blender (I use Nutribullet – my absolute best friend in the kitchen)
- 1 cup of oats
- 1 banana
- 1 cup of plant based milk of your choice
- 1/2 tsp of cinnamon (optional)
WHY OATS?
Oats not only taste good but are quite possibly the healthiest grains on earth. They are rich in fibre, protein, magnesium, zinc, manganese, antioxidants and are also gluten-free. YAY!
Method :
Simply add all 3 ingredients into your mixer/blender, pulse for as long as needed and the batter is done! You are now ready for frying.
I suggest to use a non sticky pan with a tiny bit of coconut oil, making small pancakes rather than large crepes as they are much easier to flip over.
Depending on the size, you can make up to 15 pancakes.
What Can You Use As a Topping?
Literally anything you love! You can either stick to the healthy ingredients and use fresh or frozen fruits and a yogurt or if you fancy being naughty, just replace the yogurt with an ice cream and drizzle with a chocolate sauce or a cream and/or a maple syrup.
Add 1 tsp of sugar to your frozen fruit and heat up until a sauce-like texture is created.
Pour the fruit sauce over your pancakes and enjoy.
I layered my pancakes using peanut butter to stick one on top of another.
Peanut butter is great for extra protein plus it helps pancakes to stick together.
