Chocolate Chip & Pecan Oatmeal
Good food = good mood! The world might still be full of uncertainty right now but at least one thing remains the same – my unconditional love for oatmeal!
I N G R E D I E N T S :
Oatmeal:
- 1/2 cup of oats
- 1 cup of plant-based milk
- A few chocolate chips/buttons (or chocolate powder)
- 1 tbsp of desiccated coconut
- 1tbsp chia seeds
- 1 tbsp coconut sugar
Topping:
- 1 banana
- chocolate chips/buttons
- 1 tsp desiccated coconut
- 1 tbsp peanut butter
- pecan nuts
- drizzle of chocolate sauce
- + anything else you may fancy 🙂
M E T H O D :
Pour the milk into a pot and allow it to heat. Gradually add in the oats and stir. Next add in the coconut sugar, coconut and a few chocolate buttons. Mix in properly and cook for a couple more minutes. Transfer the oatmeal into a bowl, top with banana, coconut, mixed seeds and peanut butter. Finally, drizzle with some chocolate sauce and serve!
Add as little or as much topping as you desire. There is no wrong.
I had some left over blueberries and so I added them as well.
It depends on how big you like your breakfast but the recommended quantities will make a big bowl. Try it the first time and if you find it too much, next time you can adjust the portion to your liking.
