Full of Fiber Apple & Cinnamon Oatmeal

I have never really been good with having breakfasts. Smoothies, yes! But breakfast as such, not really. As they say, “breakfast is the most important meal of the day” and the truth is, they’re right!

Lockdown has got me into making oatmeal pretty much every day. At first, I thought it would be very time consuming and, in fact, I couldn’t have been more wrong. It takes me anything between 10-15 minutes MAX to make a bowl like this one. I know, it all may look a little fancy at first but trust me, under all that beautiful topping (which only takes a couple of minutes to do), all that’s underneath is just a very simple porridge.

This oatmeal is the perfect breakfast for anyone. It is dairy-free, egg-free and also GF. It is full of fibre, protein and omega-3 fatty acids and takes less than 15 minutes to make.

I N G R E D I E N T S :

  • 1 apple
  • 1 banana
  • 1/2 a cup of oats
  • 1 cup of plant-based milk of your choice
  • 1 tbsp coconut sugar
  • 1 tsp cinnamon powder
  • 2 tsp chia seeds
  • 3 tsp desiccated coconut
  • 1 tsp mixed seeds

M E T H O D :

Start off by cutting the apple into small cubes and then add to the pot on a medium to high heat. Add in the coconut sugar and cinnamon powder together with a splash of water to stop the apple from burning. Simmer for 5 minutes, then set aside. Using the same pot, pour in the milk and then add your oats, 2 tsp desiccated coconut and 1 tsp chia seeds. Bring to boil, then turn the heat to minimum and cook for about 5 minutes or until creamy. Transfer the oatmeal into a bowl and decorate with cooked cinnamon apple, sliced banana, remaining coconut, chia seeds and mixed seeds and serve!
