Easy One-Pot Tomato & Courgette Pasta
Colourful, flavourful, comforting, delicious, simple, rich, versatile …. I could go on forever!
This one-pot, bursting with flavour pasta recipe, is perfect for whatever occasion – a family meal that you can whip up quickly on weeknights or an impressive dinner for when you’re hosting your friends!
It’s a no-fuss meal using only one cookware and any vegetables you like. Ideal for small kitchens or kitchen without a dish washer.
I N G R E D I E N T S :
- 1 tbsp olive oil
- 1 large red onion
- 2-3 grated carrots
- 3 large tomatoes
- 1 courgette
- 4-5 grated garlic cloves
- 1 tbsp tomato puree
- salt & pepper
- 1 heaped tsp dried basil
- 1/2 pack spaghetti (or any other pasta)
- 600ml boiling water (rough measurement)
Optional add ons:
- nutritional yeast
- cheese flavour sauce mix
- topping of your choice (I used Melt-in-the-middle no-fishcakes by M&S)
M E T H O D :
STEP 1
Heat up about a table spoon of olive oil in a large pot (ideally one you have a matching lid for). Add chopped onion and grated carrots and fry for a few minutes until softened. Then add chopped up tomatoes and courgette and cook for further couple of minutes. Stir in grated garlic cloves, tomato puree, basil, salt and pepper and cover with a lid. Reduce the heat and allow to simmer for a few minutes. The sauce at this point should be rich and have ragu-like consistency.
STEP 2
Boil water in a kettle and pour it into the sauce. I usually eye-ball the amount of water rather than measuring it. Add spaghetti, ensuring the entire content is leveled with the sauce, lower the heat, cover with a lid and cook until pasta is ready. Stir every few minutes or so to prevent pasta from sticking to the bottom. Add extra water if necessary.
Serve immediately as it is, alternately sprinkle grated cheese or nutritional yeast flakes on top or even add a topping of your choice if you’re extra hungry. I used the Melt-in-the-middle no-fishcakes by M&S.
