The Best Cheese On Toast!

When the tomatoes start shrinking, you know it’s perfectly cooked.

This awesome recipe makes not only the perfect breakfast but also a very comforting afternoon snack when you fancy something warm in your tummy without too much fuss. There is no washing required after making this recipe, apart from the plate you will be eating from.

I N G R E D I E N T S :

  • Bread of your choice
  • Marmite (you can skip this step if you fall into the category of Marmite haters ;-))
  • 2 of your favourite plant based cheeses (1 is fine if you don’t have another option), my favourite is applewood and violife cheddar.
  • Any size tomatoes
  • Freshly grounded pepper

M E T H O D :

First of all, using a toaster, toast all your bread slices exactly to your liking. I like mine slightly golden with a bit of crisp. If you like your toast crispier, don’t worry too much as you will be putting these in the oven where they will crisp up even more anyway.

Whilst your bread is toasting, slice or grate your favourite cheese and cut your tomatoes into slices too. I like my cheese to be perfectly melted, gooey and sticky and I find that the smokey applewood and violife cheddar is the best combination!!

When the bread is toasted, place it onto a grilling tray, spreading a tiny amount of marmite, then pile the cheese on top. (Alternatively, use brown sauce or ketchup or skip this step completely). Use as much cheese as you like! Add sliced tomatoes on top and season with freshly grounded black pepper. For extra flavour and a bit of a kick, add grated chilli flakes.

Place into a preheated oven for 20 minutes at 180°C degrees. Remove and enjoy!

Mind the tomatoes before digging in! They will be very hot!
