The Ultimate Creamy, Cheesy Pasta!

Attention, attention!!

This dish is comfort food perfection! If you love cheese and you love pasta, then keep on reading! Your mouth will be sticking together weeks after eating this! This recipe is packed full of cheesy and rich in flavor ingredients, perfect for this time of the year.

I N G R E D I E N T S

  • Pasta of your choice
  • Any plant-based milk (I used oat milk)
  • Knob of butter or margarine (around x2 tbsp)
  • 2 heaped tsps of Free and Easy cheese flavour sauce mix
  • 2 heaped tbsp of nutritional yeast flakes (I use Engevita)
  • 1/2 block of Violife Epic Mature Cheddar
  • 1/2 block of Applewood vegan cheese
  • Handful of broccoli
  • Handful of cauliflower
  • Black pepper
  • Fresh Parsley

M E T H O D

The key ingredient to this creamy pasta recipe is to cook them in milk rather than in water. To correctly measure the amount of milk, place pasta into a pot and cover the entire pasta content with plant-based milk of your choice. Milk needs to be in line with the pasta, then covered with a lid. Bring to boil and stir every couple of minutes. Milk will absorb quicker than water would but don’t panic! Stirring will ensure pasta is cooked evenly and if you feel that you need more liquid, just add a splash of water.

I find oat milk the best alternative to dairy.

Whilst the pasta is cooking, you can prepare the vegetables. I used enough cauliflower and broccoli florets, cut into fairly small pieces, to fill up a small bowl. Add water to a separate pot and bring to boil. Add broccoli and cauliflower pieces and cook for about 5 minutes, drain and set aside.

You can grate cheese at the same time. I used two of my absolute favourites – Violife Cheddar and Applewood Smoky Cheese. These two are heaven on earth and they both melt like a dream, which is exactly what you want! Applewood cheese gives it that deliciously smoky taste, while Violife adds cheddar-like aroma and richness.

I usually get these from Tesco’s but you can also pick them up at other supermarkets.

You should still have a little bit of milk left at the bottom. Do a taste test to find out whether pasta is cooked. If it’s ready, add grated cheese, cheese flavour sauce mix, nutritional yeast flakes and cooked vegetables. Mix all ingredients really well and serve immediately. Garnish with freshly ground black pepper and fresh parsley or herbs of your choice.

I also added a little left over of the freeFROM jalapeno & chilli cheese by Tesco’s. Only because I had a little piece left.
