No‑Faff Mushroom, Courgette & Pesto Orzo (Van‑Life Edition)

A super creamy, 10/10 one‑pot, camper friendly meal.
Orzo is the ultimate van‑life pasta — tiny, cupboard‑friendly, cooks fast, and stretches into 4–6 portions depending on your appetite.
INGREDIENTS:
- Orzo 1 cup
- Water 2 cups (always double the amount of water to orzo)
- Courgette – 1, diced
- Mushrooms – 4, diced
- Onion – 1 small, diced
- Garlic – 3 cloves, minced
- Stock cube – 1
- Green pesto – 4–5 tsp
- Plant-based cream cheese – 1 heaped tbsp (or more if you want it extra creamy)
- Plant-based chorizo (optional) – small handful, diced
- Italian herbs – pinch
- Salt & pepper

METHOD:
Chop everything into small pieces so it cooks quickly. Add all ingredients — yes, literally everything — straight into your camping oven dish or hob. Give it a good mix, pop the lid on, and cook gently.
Stir occasionally (or more often if your pan tends to stick — you’ll thank yourself later when washing up). Cook until the orzo is soft and creamy. That’s it. No faff, no fuss, just good food!
